I am typing this with sticky fingers and a lingering taste of lemony vanilla on my tongue… Buñuelos de Cuaresma are a typical Easter sweet here in Catalonia, consisting of fried dough balls filed with a creamy custard, rolled in sugar and piled high in local bakeries and patisseries
The dough is made with butter, flower and eggs and a little water infused with lemon peal and this is deep fried in sunflower oil (the trick is to roll the doe off a table spoon, so you get the exact quantity and shape). When the balls are nice and golden they are then rolled in to sugar. Buñuelos can be eaten plain but are also filled with custard or cream.
